It all began in Colquitt, Georgia with my Grandfather who was always cooking for the Churches and the town Councilmen in the area. He would cook whole hogs all night, pull the meat off bone 12 hours later and than mix it with his homemade sauce. My father growing up by his side learned the family techniques and secrets and began passing them on to his children. After moving to Florida now it was my turn to stand by my parents and begin to learn the family recipes and secret techniques. All three children leaned how to cook, but I was intrigued and fascinated with cooking. I can still remember being in elementary school standing on a five-gallon bucket so I could reach the countertop as my mother taught me how to make homemade biscuits. By the fifth grade I was cooking a complete meal. Dad would never measure anything when he made the sauce, he just went by the taste. When he lit the grill friends and family would come from all over the neighborhood and bring meat for him to cook for them. I remember not having anything to put on the grill and then the place would fill up with people and dad would be cooking up a storm. People would always leave meat for the cook. He never had any trouble finding food to cook, once the word got out, he was busy. As I continued to grow, I was always by his side helping him with the cooking. Now raising my family in Port St. Lucie, Florida I found myself barbecuing for the local Churches and businesses just like my Grandfather did. The first time I made the sauce on my own it was a flop. I had only watched dad and since he never wrote or measured anything my first attempt was bound to be doomed. I immediately called my dad and he came to the rescue. He gave me the list of the ingredients; of course he never measured anything so I got an estimated amount for each ingredient. It took me several trials before I came up with the right taste. Everyone that tried my sauce loved it and asked how they could get some. People were always telling me that it had a very distinctive taste and that I should bottle the sauce and sell it. Most have said that they have never tasted a sauce like it. Finally, my friend got behind me and kept encouraging me. Together we came up with a plan of action. We started contacting bottling companies, label manufacturers and a commercial kitchen to start producing this distinctive sauce. Thus Matt's Bar-B-Q Sauce legacy began. Now some of my family members have told me my sauce taste like my grandfather's sauce and I never seen him make it.
